Perfect tomatosauce for whatever and whenever!


 Cut lots of tomatoes (mini tomatoes are best), yellow and red peppers cut into pieces, garlic, crush a clove or 3 (not chop), cut shallots, all these ingredients of your choice / flavor use.

Fresh picked red basil, fresh Italian herbs such as sage, rosemary, thyme and oregano finely chopped.

Beautiful olive oil in pan, not too hot, and the garlic and shallots gently simmer without colouring them, add a splash of red wine.

Slightly thickened (about 5 minutes) add the peppers, tomatoes and spices, pepper and salt (to taste) and braise for 10 minutes.at last add a dash of balsamic vinegar.

The perfect sauce! (and for the surprise bite add mini tomatoes to cook in the sauce the last 3 minutes , they will taste like delicious "flavor bombs"..
